recipe number 1

Coffee Arawak
4 qts strong hot coffee
8 medium unpeeled oranges thinly sliced
sugar to taste
1 pint heavy cream
1/2 cup sugar
4 tbs grated orange peel
shaved unsweetened chocolate
pour hot coffee over sliced oranges.  Let stand 1/2 hour.  Strain.  Reheat coffee (do not boil).
Sweeten to taste if desired.  Pour into mugs.  Whip cream adding sugar a little at a time while whipping. Float on coffee.  Garnish with orange peel and chocolate shavings.  Yield:16 portions
