THE PERFECT ICED TEA

You would think iced tea is a no brainer, make the tea and put ice in it....but think again!

PERFECT ICED TEA
2 quarts "freshly drawn cold water"
1/2 cup loose tea or 15 teabags
bring one quart cold water to full boil in saucepan, remove from heat, add tea,brew 3-5 minutes,stir. Strain tea as you pour it into a glass pitcher, add one quart cold water. DO NOT REFRIGERATE! tea kept at room temperature will remain clear and flavorful for 4-5 hours. to serve put 2-3 ice cubes in tall glass, add sugar and lemon to taste!
YIELD: 8 servings
*refrigerating does not harm flavor or quality, but it may cause tea to become cloudy.To produce crystal clear amber color add a little boiling water.
