PARTY MENU #2 ($1.00 PER SERVING)

The idea here is to plan something a little more mature than bean dip and chips, or nachos for the upcoming SUPER BOWL PARTY:
LIPTAUER CHEESE WITH CRACKERS
RUM PINEAPPLE DAIQUIRI
OR
RUM PINEAPPLE PUNCH

LIPTAUER CHEESE
 8 (8 oz pkgs) cottage cheese
6 ( 8 0z pkgs) cream cheese
1 cup soft butter 
2  (12 oz) anchovy fillets drained and mashed
1/2 cup finely chopped onion
1/2 cup chopped capers
3 tbs caraway seeds
3 tbs paprika
1 tsp pepper
parsley sprigs
1 9 1/2 oz box of whole wheat wafers
1 (8oz) box round cheese crackers or your choice
 Force 8  pkgs of cotttage cheese through a sieve and blend smoothly with all the cream cheese. add butter, onion, capers, caraway, paprika and pepper. Mix all together, then pack into small crock or glass bowl. Press foil or waxed paper tightly over cheese and let it ripen in refrigerator over night.
Serve from decorative bowls or turn out onto large platter and shape with a long saptula. Garnish with parsley sprigs. Surround with crackers.
YIELD: 24 servings

RUM-PINEAPPLE DAIQUIRI
6 ice cubes, cracked
1 1/2  cup pine-apple juice
1 1/2 cup rum
2 tbs lemon or lime juice
2 tbs superfine sugar

in a blender combine ice, pineapple juice, rum, lemon or lime juice and sugar.
Whir for 15 seconds or until ice is completely crushed. Serve in frosted  4 oz glasses.
note: to make 24 servings, you will need 1 tray ice cubes,1 quart bottle of rum, 46 oz of pineapple juice,
1/2 cup lemon or lime juice.

RUM-PINEAPPLE PUNCH
2 (46 oz) bottle of pineapple juice
1 qt bottle of rum
1/2 cup fresh lemon or lime juice
2/3 cup superfine granulated sugar
chill pineapple juice
rum and lemon separatley.
Combine in large punch bowl, together with the sugar just before serving. serve over ice filled punch cups.
YIELDS: (2) 4oz drinks per 24 guests
